Made with fresh cow's milk, GranQueso lives up to the English translation of its name, “great cheese.”
Description
Similar in style to Spanish Manchego, GranQueso has a firm body and a rich, full flavor. This handcrafted cheese is shelf-cured and has a traditional basket-weave rind.
Appearance
Ivory colored with an inedible red "basket weave" rind.
Texture
Six months of aging to reach maturity gives GranQueso a firm texture.
Flavor
Rich in flavor, but not pungent, Gran Queso has an extra sharp tang.
Serving Suggestions
Grate some onto a salad to perk up your greens, or top vegetables or a vegetable casserole (it goes well with potatoes, onions, mushrooms and broccoli, just to name a few). Easy to shred, but also easy to slice -- it is moist enough not to crumble when you slice it. Gran Queso also melts and blends quite well, so put it on top of pasta or in a quesadilla.
Goes Well With
Pairs well with Albariño (an aromatic and acidic white wine from the Iberian peninsula, more familiar to some from the Portuguese term Alvarinho), dry sherry, Manzanilla, Rioja, Cabernet Sauvignon, Port, Madeira, Scotch, Pale Ale, Lager, whole grain or wheat crackers, water crackers, butter crackers, poultry, pork, beef, vegetables, pears, dried fruits, nuts.
